Recipe: Oatmeal to feed your brain

Ingredients

  • ⅔ cup fresh water
  • ⅓ cup steel cut gluten free oats
  • 2-3 tbsp each pumpkin seeds and walnuts
  • 1 tbsp coconut oil
  • Dash of cinnamon
  • ¼ cup fresh blueberries 
  • 2 tbsp hemp hearts 
  • 1 tsp lions mane powder
  • 1 tbsp maple syrup or honey
Instructions

- Add the water and oats to a saucepan and bring to a boil. Reduce heat and simmer according to package directions. 

- While the oats are cooking, prepare the toasted nuts and seeds. In a skillet over medium heat, start by toasting the pumpkin seeds and walnuts in the coconut oil until golden brown. Be sure to stir them frequently and keep a close eye on them as they can burn very quickly. Add a dash of cinnamon, stir to combine, and set aside. 

- Once cooked, stir the lion’s mane powder into the oats and transfer to a serving bowl. Top your oatmeal with the fresh blueberries, toasted nuts and seeds, and hemp hearts. Finish it off with a drizzle with honey or maple syrup and enjoy your brain-boosting oatmeal!
